I realize it's Labor Day, but for me as soon as there's a little chill in the morning air and the calendar reads "September" my cravings turn to autumnal flavors. I love the sight, smell and taste of pumpkins... from now through the winter months I try to come up with just about every way possible to consume the stuff.
This morning I made a twist on my standard almond meal breakfast porridge. Yum! I cannot wait to try out some more Paleo-friendly pumpkin recipes. Bread, pancakes, pudding, cookies... you name it. This was a respectable start to the season.
Pumpkin Breakfast Porridge
1/4 cup almond meal
1/4 cup canned pumpkin
1/4 cup coconut or almond milk
1/2 tsp. pumpkin pie spice
Combine all ingredients in a microwave-safe bowl and cook for one minute. Stir and heat for another minute or until set to your liking.
Sweeten and top to your heart's content. Today I went with raw pecans, raw cacao nibs and a tbs. of sunflower seed butter stirred in. Some other options are a smidge of raw honey or maple syrup, unsweetened shredded coconut and hulled hemp hearts.
