Homemade Pumpkin Seed Butter

I'm working on a fall e-cookbook for my family food business involving pumpkin recipes. Today at Whole Foods I had a revelation in the bulk foods aisle, and left with about 2 lb. worth of raw pepitas. Tired of working with the orange stuff, I thought it would be fun to throw in a recipe or two using the seeds. I came home on a mission to whip up some pumpkin seed butter


This is more of an idea than a set recipe, as I kind of tinkered as I went along. I used melted coconut oil, a little raw honey, salt and allspice. The seeds were *really* dry, and even with the oil I was having a hard time getting them to break down. I finally added a few tbs. of water, which helped the food processor do its job and get things a little creamier.

Due to the natural green tinge of the seeds, this is not the prettiest butter. I even tried to make it a bit fancy with a sprinkle of cinnamon on top, but it still looked a bit like my cats' wet food! I can honestly say, though, that from a taste standpoint it is divine. My son had one spoonful and declared it "awesome."


Definitely worth trying out! I'll be stirring some into my Paleo hot cereal tomorrow.
