Proving my obsession with sticking to Paleo, I cooked tonight's dinner in the midst of our power outage due to Irene. I lit the gas burners with a lighter and tried to get everything done while I still had enough daylight for chopping!
I have to admit it's definitely not my prettiest salad, and I didn't measure everything so think I used a bit too much green in relation to the meat and dressing. The recipe is from Epicurious, called Summer Steak Salad with Ginger-Lime Dressing.
I think the inclusion of the pineapple and red onion cooked up in the skillet really made this dish. I would make it again in a heartbeat, though preferably under better circumstances!
