Mahi Mahi w Ginger, Lime and Cilantro Sauce

A few days ago I picked up some frozen mahi mahi at Trader Joes, knowing that I wouldn't get a chance to be cooking my own dinner until about 8:30 last night. I had the kids all day and then once they left for their father's I had to cram in a hair cut/color and lifting workout.

I found this recipe for Sauteed Mahi Mahi with a Ginger, Lime and Cilantro Sauce... it was Paleo-friendly except for the inclusion of flour. Instead I just lightly dredged the fish chunks in some tapioca starch. I honestly don't know that they needed *any* coating though.


What made this dish was definitely the sauce, which thickened up nicely and went very well with the fish. I used white wine to make it, as I had some sitting around that was probably better served in the skillet than my glass.
